Siding with vendors?
Is there a consensus on who you should generally pick or does it not matter?

Was playing with some people further along and I think they mentioned siding against Gunny when available since you're going to get plenty of xp for him through missions and buying. I've heard Handshake can be a pain to level.

It's whatever you are looking for and want to use. I play with a buddy so we share the load. I have two maxed and they have the other two.
Depends on your priorities.

Turncoat sells the largest backpacks at level 3.
Banshee sells the large keyholder case at level 3.
Artisan sells the AK-308 magazines at level 3.

I focused on Turncoat for the backpack and did not yet know about Artisan. It seems relatively easy to get Handshake & Gunny to level 3 as they have more missions. I ended up with Handshake, Gunny & Turncoat at level 3 while Artisan & Banshee were stuck at level 2.

I have since leveled up Artisan to level 3 by buying a lot of equipment from her which set me back about $ 300.000 or so. To get Banshee to level 3 i'm looking at a lot more money as i never really favored him. I might level him when i have enough money to burn on his equipment but i can live without him at level 3.

It is probably possible to min-max this in a way, that you will end up with 3lvl vendors just from the tasks.
I'm approaching level 40 and only have around 450 rep with Turncoat. He doesn't sell anything I'm interested in so I never cared about going his way. Just level up the people who sell stuff you want.
Any mission that has you decide between Artisan/Banshee/Turncoat/Labrat over Gunny or Handshake, absolutely pick the formers over the latter 2.

There are more than enough missions to get Gunny and Handshake to 3, but not nearly enough to do the others.

The only one you might consider Gunny is if you want another med case vs another small ammo tin. Really up to you.

The Rush backpack is enough for me. I only got up to around 1100 rep with Turncoat. Looking at his level 2 and 3 gear I realized I didn't care about any of it so his rep quickly dropped off a cliff.
Also one of Turncoats missions gives you an AK308 as a reward

There's like 2 or 3 missions that give you one of these.
But what about AK50?
I've completed all of the tasks.
Handshake had 52 tasks - Level 3
Gunny had 28 tasks - Level 3
Lab Rat had 25 tasks - Level 3
Artisan had 19 tasks - Level 3
Turncoat had 23 tasks - Level 2
Banshee had 20 tasks - Level 2
Your numbers may be different as some tasks require you to choose between vendors. I wish I could have leveled up Turncoat to level 3 to get the delta backpacks and 4-slot belts. I need 1500 more rep points to get there. You can definitely afford to betray Handshake several times as he has plenty of extra tasks for you.

I managed to get all 3 vendors to lvl 3 from missions except Artisan, but it only cost me 150k to bump her up. Id suggest you choose Banshee or Turncoat when on split missions.
Lab Rat is pointless after lvl 2
Turncoat level 3 sells the delta bags and 4 slot belts. Banshee sells bigger key holders. Labrat sells bigger medical bags(i like them). The only vendor that doesn't have anything worthwhile at level 3 is artisan.

Labrat has the large blood bags and higher usage count surgical kits totally worth it.

Compare Labrat's lvl 3 med bag with her lvl 2 med bag. Lvl 3 is actually a downgrade.
