I know it's easy to get lost in the menus.
After you open the menu, press F1 or F2 to switch tabs until you get to "Under the Hood". You should find your way to configuring your keys and controls there.
A and Z had to be used for movement since Up and Down were used for leaning when on a motorbike... assuming that's what you had in mind.
Sounds pretty ridiculous to make flight controls default for a racing game, I know. But it works in a way.
I still kept shift and the space bar the same for boost and handbrake. You could try it the way I have it, works pretty well. :D

and yeah, the menu sucks
Either rebind them to what suits your hands or use a controller.
By the way, default keys for movement in games I grew up on were Q/A/O/P+Spacebar, so I'm too old to frown about A/Z and cursor keys honestly. I personaly am happy with default game controls and wouldn't give a damn about some report!
But I admit, analog steering/axis would be great even here...last gamepad I used was ol'good Nintendo one, which had no axis but I should get myself some contemporary controller. Thanks for reminding me mate.
