For making jumps, the Manhattan and Vegas are great. Heck if anything, these vehicles almost have too much jumping power. They have no problem making all jumps and getting all billboards in the game.
Due to their low sensitive steering, their not bad at barrel rolls either.

The Uberschall is probably the best non DLC racer in the game.
While the PCD Special has amazing steering, it's acceleration is lacking.

Hawker Solo is a fun car for just driving around in. Also quite fast.

Duststorm Turbo is also fun to drive around in. It's also a flatspinning and barrel rolling monster. In fact it's so good at barrel rolling, you'll have difficulty landing them (it spins too fast sometimes).
It also gets so much air off jumps.

The Omlypus is a friggin' tank. Almost impossible to get taken out in that thing.

Then there's the Nighthawk. High Strength Rating, very high Speed, and absolutely UNREAL Acceleration (mostly due to it's super boost). When in doubt, just drive this thing at all times...

the car you get for completing all the jumps has got me to 40th in the world, its worth getting.
