Gonna try this on my mint 18.3 box; I was so sad when it wouldn't recognize my controller or let me change the controller, even though the game runs beautifully. Thanks for sharing/here's hoping!

first...worst menu control scheme ever....to answer your question: repeatedly press the f1 key to cycle thru menu options...pressing f1 3x should bring you to the options menu where you can find settings such as display and control options.
i didn't try a gamepad yet, but my Logitech Driving Force G29 Racing Wheel works superb after some tweaks of the ingame controller options(sensitivity about 80%), a small deadzone of about maybe10%-20%) and setting rotational degree to 360degrees via pyLinuxWheel prior to game launch.
i have to say though, the physics are a tad unrealistic: if you even just lightly push the brake pedal you start skidding all over the place. speaking as someone who has actually driven at speeds greater than 100mph(late at night on a sunday/monday at 3am on the freeway), you need to press the brake pedal a whole lot harder to cause any out of control skidding.
currently on Proton 3.16-6 beta, kubuntu 18.04 LTS, amd 8320 FX 8core CPU, 24GB RAM, NVidia GTX 950 2GB, all settings maxed ingame. the only "tweaks" i performed was protontricks 24740 winecfg to disable mouse capture as i use a dual head setup with 2x 40in LED TVs
