Red & Blue Dragons
Any tips on beating them without using Bow/Arrow or Blood/Crystal Spear?

It's important to note that dragons move/attack every second beat.
Their breath attack has a 3-beat cooldown (including the charge, and begins after the actual breath attack)
If you go beside them during their turn, they will claw you down instead of doing a breath attack.

[Charge] -> [Breath] -> [Idle] -> [Move] -> [Charge] -> [Breath]

They can also walk and charge breath at the same time, if you end up within range of the breath.

Like Tabushka said, you can fight them in just a 2x2 (or 2x3) space but it's slightly trickier than fighting them vertically. This can be done with just a dagger. If you search "Red Dragon Dance" you can find a GIF of this pattern.

Edit: Realized I made a few mistakes with explaining their breath behavior.

Something I'm still a little confused about: if you're supposed to move to the same 4x4 beat most of the time, how do you move faster than most enemies while staying on the same rhythm?

I am confused about the context of this question. Can you elaborate more?

The only way you can outrun enemies is if they take more than one beat to move or you get them stuck behind walls or other objects.

Fast enemies (those that move every beat) with more than one health are *usually* knocked back when damaged, like white monkeys, for example.
