I don't get it how to fight with red dragons

I just can't kill them. when I go to sides he kills me with his fire beam and when I go up and down he kills me with hits, how can I kill him with dagger?

If you have vertical space, you can also be adjacent to it and alternate between attacking and moving in the same direction it's chasing you since it skips every second beat.

What I would usually do if I encounter a Red Dragon while I only have a dagger is to bait it to a space with good vertical movement. As soon as I find such a spot, I'd wait for the dragon to appear below my character, before doing a pattern of [Hit -> Retreat -> Hit -> Retreat]. The dragon only acts every second beat/turn (depending if you play Bard or not.), so this can prove to be reliably safe, if you have the beat down.

Red/Blue dragon's breath has a cooldown of 4 moves, and usually they use it the moment you are within the breath's range.

This makes the dragon dance (see the gif posted above) very useful especially when you have very narrow area with at least 2 rows and 2 columns of space. It may be a little tricky to do in rhythmed moves, but would be very awesome when you learn it.

Visiting the mini boss trainer would be helpful, too!
