I wanna powergame!
I want to grind and make my characters stupid strong and want to fight/grind that asap, I know how to grind getting into fights by just walking around the sewer off the start even but should I try to roll strong classes off the start or just make like three fighters, a priest, a mage and a theif, THEN making them into Valkyries, Monks, Ninjas or Lords etc?

Mana regeneration rate is set based on what class you start as, so it's best to start everyone as mage/psi/bish/alc no matter what class cycles you go through to get max skills. Just reroll at generation to make sure you can change class to something more survivable at first.

Cool! I'll make sure that fighters are alchemists that have the strength prerequisite etc..

Weapon skills will be a bit of a challenge since I won't have the swords to grind them but I can get swords later. One changed into a fighter that will be a valk later, starting as a priest so I THINK polearms from staff translates into spears which I want her to use. So the goal post is closer with her.

I recommend using Mad God's Cosmic Forge utility. I have been playing Wiz7 and powergaming using the CF is quite simple.

For instance, you can set the attribute requirements for Valk/Lord/Samurai/Monk/Ninja to all be the same and class changing will be painless. No more quit/load to get that one point of Vitality!!!
