This post is a few weeks old, but if you haven't solved your issue, you can use Dosbox's built in keymapper. Press CTRL F1 and bind the keyboard inputs to anything you like.
For Wizardry 6 all you need is the arrow keys one the Dpad, and a button for Enter (confirm) and ESC (cancel). Then just set a key to bring up the virtual keyboard when you need to enter text.
Wizardry 7 is more complex because it uses a ton of keyboard commands instead of the arrow keys as menu movement. I made a controller profile that works REALLY well using the mouse driven system for 7 and its a breeze to play 7 on the sofa on my TV. I'll be happy to share it if anyone is interested.
