Honestly though you're likely better off manually downloading the depot (via Steam) corresponding to whatever version you want to play, plus the corresponding DLC depots. Unless that version specifically happens to be old 2E (and when I say that, I mean the 2016 version), in which case you can just use a dedicated "Beta" branch.
I'd argue Steam needs to give options to easily roll back to earlier versions of games. As much as I like my games to be DRM-free, Humble builds aren't typically kept up-to-date, so having an option to play old versions directly through Steam without tedious manual actions would be welcome. And not just for this game; for example, updates can break stuff (sometimes on specific configs), yet players are stuck with the latest version unless the devs or publisher decide to release a "Beta" branch with an older build of the game.
