For example, some would say that including hostile NPCs in a survival game is a cheat because the ships often contain advanced features such as reactors which can be plundered from the wreckage, often early in the survival game. The same can be said for having spiders and/or wolves because of the loot they carry.
Hacking can be seen as taking over an enemy ship or station for use by the player.
Is this what you mean?
They then use these to teleport to players and delete their grids.

There are of course others who seek something they can't get from any other action. Take for example twitter bans, a number of people who managed to get other users banned for any slight were asked why they did it and the answer they gave wasn't because it was right or moral or a just but because they got off on it, the idea of destroying anothers life is what they live for.
Same in game, how many hours has a person worked to get this station or ship up? 20 hours or more. Lets wreck it because they know it will upset the player, and that is what they need to get their rivers flowing or to full mast.
Of course from what OP said it sounds like these people are hacking people who would cheat like some kind of vigilante group.

I keep the General discussion forum for discussions about Space Engineers game only and a discussion about "Why / what they find enjoyable while hacking" is not really on Topic.
Players of the Official servers can contact in Direct Message the Official Admins on Keen Discord to report this kind of problems and I can tell I see a lot reporting over there, so don't be shy to report to them.

Once in, go to the "Role-selection" channel, scroll down and select a emote, PC or Xbox to unlock the proper community and proper channels.
PC role + Go to "Help-for-official-server" channel to read and follow the Pins to know how to contact the admin.
Thanks Dan, yes there have been lots of issues with them recently and even accounted for the recent outage of the official servers.
So Sad.
There was a discussion back on Keen's forum where someone complained saying there was a cheater on a server and naming them, saying their ship turns could not be done with a legitimate ship. The named 'cheater' got into the conversation saying they were not a cheater, but just really good at making ships (linking to their legitimate blueprint for proof), and were surprised at how un-maneuverable other observed ships were.
