More or less this. You need a welding ship in order to make large ships in a timely manor.
Line 3 welders, pipe them to a cargo of your choice, and slap a cockpit on it. I like to use 5 welders around a cockpit (3 right below 1 on either side) myself as that makes even heavy armor blocks take no time at all. And can be rather small to fit in a 1*2 block opening of a large ship.
I also take the effort to combine welders and grinders into the same ship. What you do for one, mirror it on the ass end for the other. Going to take more space and build time but helps with not needing to fuel 2 ships and auto transfers the mats from salvaged ships to your welders without you doing a damned thing but change seats. Only needing you to dock for the mats you make yourself or for transporting.
