I thought those were only there to help the inertial dampening, didn't know they were actually required to maneuver the ship. I assumed the directional thrusters did that, as that's what seems intuitive :p

Once you have the above-listed items, you're pretty much ready to fly the ship.
Other items, such as lights, guns, or even armor blocks aren't needed for a ship to be functional.
I have actually built a ship that's 3x3x5 blocks in size. It meets all of my requirements, but also has a landing gear, a camera, and an ore detector. There are no armor blocks at all. The main reason why I have just those items is quite simple: The ship is a prospecting drone. No more, no less.
