It's also extremely expensive to build in Survival Mode, the author said its meant to be endgame construction.
The refineries can sometime be an issue, but there is a solution, build more of them. Some people build 10 in their base. Also learn to use the Arc furnace for the ore that it can refine as it does it almost 2x faster. I have 2 of those on my nomad ship I am building and it can take 100k of iron into ignots in about 5-10 minutes.
I usually use my mining ship that is remote controlled to dig straight through an asteroid a few times till it is full, then bring it back unload it. Then start refining all the ore. Then go back to building something and before I know it most of it is completely done.
I want to build a huge cathedral!!! Or fortress!!! Out of STONE!!! Not this boring metal coffins!
The point of SE is that what you can build depends entirely on your skill - if you have the mad skills to build high walls, guided missiles or a ship sized gravity railgun, then you can do that. You don't have to first level up your smithing skill by turning all the iron in the country into iron daggers.
