If its a small built between 1-4 gyros should be able to flip it.
You can even set up your gyros in your hotbar as an anti-flip system.
Adding a 'flip' button kind of ruins the point of the games attempt at physics IMO.
But I manage by changing wheel values, changing mass/center of mass, adding thruster/gyro(s) till I find the stable solution, find the concepts/values that don't flip over.

The shape, mass/center of mass, speed, friction, strength are the important ones to avoid flipping over, like low profile massive car (heavy armor) are more stable in race track scenarios.
can't recall flipping one.
Or driving at a reasoable speed when mounting crest's in the terrain.
But, it is always easy to blame the game and the dev's.
