Reduce steering radius if it seems the wheel bumps into the frame of the car when you turn.
Reduce steering speed and return speed if the car seems to lose control/rolling over when turning.
Reduce friction, actually setting friction to 0% makes it so your car drifts instead of rolling over. Which is usually better. With zero friction you can also use gyros to help turning.
All wheels that don't steer must be at Zero friction, else your car will keep bouncing when trying to turn.
Edit: The heavier the car, the better. Lightweight car, or low gravity will make the car float and jump and bounce and roll over. You don't want that. The car must be 'glued' to the ground at all times, to acomplish this:
1) Natural gravity: Make the car heavy. Use heavy armor and keep the center of mass close to the ground.
2) Artificial Gravity: Place a great amount of mass blocks close to the ground.
3) Low gravity: Use upward thrusters to "press" the vehicle against the ground. Use thrust override.
