1) out riders basically make a catamaran or trimaran, they don't have to be that big, they just add weight and lift, to resist the lien
2) there is a script on the work shop designed to keep a ship level, it needs dedicated gyro's, I use it for airships and heli carriers. Its called auto level or something like that.
From memory the water mod calculates the displacement, so if the centre of gravity is off centre you get the ship leaning. Some of the plane mods allow you to see the centre of gravity (and lift) they may help confirm is off centre, but may calculate it differently. if you want to shift components around to redistribute the displacement and mass.
In terms of staying in place, you could try the auto pilot with maybe a timer to keep triggering it to go to anchor'ed locations GPS. not tried it and it could move the ship around a lot to line up as it likes to head to the co-orients. Other then that you would need to either use a script designed to keep the ship in place, convert to station (may need to have unsupported stations set) or only anchor is shallows were you can deploy a piston(s) based landing gear.
There is a setting from memory to adjust wave height I believe, look at the commands. Don't remember any tide controls,
The game has a built in setting for that, its under the info tab. See if it agrees with the mods one.
What if you removed the very bottom of the hulls 'V' shape and flattened that?
