You can of course look in the workshop for planets. It's a good idea to look at the updated date and comments of any workshop items you're interested in. Too many of the workshop items unfortunately don't work or cause issues because they're old and haven't been updated to work properly with the current game version.
However, as I understand it, your computer/game may not do well handling a big planet. From what I've seen, most planet mods and players use that max size only for gas giants, which are very low-detail planets for eye candy mostly.
Scaling up planet with actual voxel map could impact your game performance, I'm not sure. Also, scale it up too big, and the voxel map may look really ugly b/c most planets are designed to be used at around 120 km size.
You may get slightly more tolerable visual results if you scale up one of the more detailed planets (some of the mod planets have file size of 300-700 mb).
Finally, vanilla speed is limiited to 100 m/s, so some kind of speed mod may be useful to increase the cap. However, be aware that the speed cap exists for a reason. The game doesn't always handle higher speed interactions gracefully, like collisions and stuff (I personally adjust the Aerodynamic Physics mod speed cap up to 300 for small grid, 150 for large grid).
TLDR small planets look weird, but for playability and the default speed cap, it's sized for fun and game performance.

Bear in mind that the smaller planet size wasn't done to annoy people, its the overall best game performance size. Larger planets and the game starts going weird.
I decided to stick with vanilla for the moment.
Gonna get to know the base game for a while before trying out mods.
Super fun so far, though. Feels cool to take the time to build things.
I think that the 120k diameter size is to avoid straining your system. That being said, how much bigger do you need? I've done multiplayer games with half a dozen people on a 120k world and after hours of play we never saw each other.
I have the same question. Why do you want them any bigger? I don't think I've ever traversed an entire planet.
With our earth being so big the horizon looks almost flat from a reasonable height. With SE, earth looks very curved at every height. Just a little nit-pick, that's all.

Not sure what you mean. Support for planet sizes > 120 km is a mod, not vanilla official.
Same for configurable speed. It's not vanilla official, and not tied to planet size. Separate mod can be used for that.
I personally only use the Aerodynamic Physics mod, which allows for small grid/large grid speed caps. Not sure what the current state of other speed mods is.
The larger planets don't really strain your computer. I've made 360km wide planets with no issue in terms of performance.
The issues I've noticed come from the lack of relative resolution in the terrain mapping, especially mountain areas. The bigger the planet, the higher the chance of falling through the voxels in very mountainous areas.
