The first thing that you need is a spare PC or laptop that meets the minimum specs for the server. You DO NOT want to run this on the same machine that you are playing on. It should be on it's own PC.
Second, you need to make sure that the proper ports to the host PC are forwarded in your router to that PC. This requires that you assign that PC an internal IP address.
Once that is done, you can install the server software.
Create a new world in your Space Engineers game and once setup with the settings and mods, if any, that you and your pals prefer, you can then save it, and copy it to your server PC.
Setup an 'instance' in the server software and run the save that you just copied.
If you did everything correctly, you will now have a live world that you and your friends can play on anytime they wish, 24/7/365.
For sure it's better a second PC used for the server but I recommend to try local Friends mode to see how it goes with your friends, for a test to see if you and friends will have streaming problems.
-> Quick test to see if your PC can support runing the game and stream all data to the other PCs in same time.

I tried the SE Dedic in my second PC and it was working well with my friends living close to my home.
So far no nothing was great, mostly its just really laggy when mining, so the non host for local hosting players get a few seconds before rocks start to mine and if you stop mining they slowly mine a bit more after that.
For a dedicated server would a machine with the minimum requirements be enough to host?
For reference 2 of us have the same exact system and we all live in the same state. Me and my brother bought the same parts and i built his PC and my friends PC is better then outs but the specs just to list them are
amd ryzen 5 2600 3.9 GHz
16 GB RAM
RTX 2070
and local hosting has those problems, but others i have talked to dont have these issue. I guess it could be an internet speed issue on one of our ends but idk what the recommended would be. Done a lot of single player in this game wanted to do some with my friends but it looks like we may have to wait till we can get a dedicated running.
As for server hosts that are decent, I'll list these two.
PingPerfect: https://pingperfect.com/gameservers/space-engineers-game-server-hosting-rental.php
They'll let you try a server with them for 48 hours. They host good servers for not bad of a price.
Serverblend: https://serverblend.com/space-engineers-server-hosting
Good servers for a decent price.
What specs do you plan on for your dedicated machine?
Just want to chime in - that slow mining thing, sounds like a sim speed issue. What's your max floating objects set to and what all do you have going on in your world?
As far as the Sim speed stuff, the worlds are fresh new, almost nothing going on in them, we have tried a few different settings like high density vs normal density asteroids, the limit on the hosted server on nitrado was set to 20, but the local play was at defaults which i wanna say is 50?

Not worth the trouble to use a second PC to run the SE Dedic if already not able to run a simple Local save on Friends mode.
The main reason? because i have 100s of hours on my last save and my friends have never really played, they join and i have in all honesty massive bases and no struggle for resources the ability to fight off the reavers (from mods) etc... my last base is years old on the earth planet and i finished it finally, it has a 1 button press fully automated 3 stage rocket that takes you to space that is hidden underground inside a dome structure. its a bit intimidating when you join to that they have joined it and were like wow.... then didnt play with me in the past but they liked the idea of a fresh world lol and the automation update spurred that a bit.
yes i have looked a little, which is what i was thinking would mean i dont have the specs for, however i dont know how often it is updated if it was older and it never hurts to ask for confirmation and multiple sources, but the CPU we have as spares might be 3ghz at best from our old rigs, certainly not 4.5 we for sure have the ram though. While i get the hassle of dedicated server we pay for nitrado and host a lot of other games as well, for us it wouldnt be for one game. So its bin on our mind to get one and a stronger one that will last at that because we play a lot of games together and we keep a subscription to nitrado already costing us $30 a month anyway.
I am currently in the process of upgrading my internet as well to 800mbps cuz my current internet while it suffices is not the best as is.
All can join the SE community from the Discord permalink added to this pinned :

Once on the Keen Discord -> Go to the Role selection channel to choose PC role to unlock the proper community -> Go to "server ads" channel to try the available servers.
Of course I have a good rig and It can manage very well the server while im playing but, DS is a pain... is THE pain.
It removes some features like turrets idle or some effects. Also miss some configs that you have to set manually in the config file of the server.
Also, it is very, VERY slow loading. So if you have to change something its a pain.
DS is more than unsupported, they just update it to match with the game version but dont think they fix anything and add new features, in fact they remove them to "lowering the cpu and memory usage".........
Tip:
Set the game to public, make a steam group, add your friends and find the group id (google it is very easy) and add it to the dedicated server to let ONLY the people in the group join the server.
For unknown reasons sometimes the server changes the server to public when you had it in private or friends.
Another tip:
Local/console means you must have DS client open to play the server.
If you create a new instance, it will create also a windows service. This means the server will open if you reboot your computer.
The client opened is necessary for restarts in case of crash. Also to promote people to use creative tools.
If you dont wanna take it serious go DS, if you need a powerfull server you have to expend some money.
Oh, another tip:
https://www.reddit.com/r/spaceengineers/comments/ndr0nc/unknown_signals_no_longer_spawning/
Sometimes, if not 99% of times, you will notice that unknown signals wont appear. That link explains you exactly why and how to solve it, again, is easy but annoying.
TLDR: Try DS, easy and fast to test if someone can hold it.
