If you've already done that, then double check both connector settings and make sure that neither of them is set to 'trade'.
a lot is already auto but I always place a Sorter on the Cargo port I want all to move in.
Take advatage of the following Basic setup :
1 - Place the Sorter on the Cargo port
2 - Set that Sorter on "Drain all" + add the ores or stone or else to its Whitelist.

Always better to move all to the "Cargo Room" first and connect all the other blocks on the other yellow ports of the Cargo room so on the other side and they will take what they need automatically from that "Cargo Room".

Some setup just need to add stone or specific ore to the Sorter Whitelist without having to enable "Drain All".
Example on a mining ship that eject stone and collect Uranium into its Cargo :

1 - Sorter 1 on green connector set to Whitelist Stone.
2 - Sorter 2 on blue Cargo set to Whitelist Uranium.
3 - Green connector set to "Throw out".
=
Eject stone and collect Uranium.
My first ship (that isn't unloading) has silver ore. Don't know if that is making a difference or not. I'm confused by this lol.
the "Drain All" feature on the Sorter is a must to be able to empty connectors because those keep their inventory by default.
I cant figure out why it isn't working
Have you enabled "Trade" on the connector ?
Asking because that option prevent any transfer and specified on mouse over that option on the connector block in control panel.
I can go load your save too, I'll be back later with more info on what is going on ...
Also every time I start the game a guy is talking through a tutorial. I keep re-starting and it happens every time even after a reboot! Can't find how to stop it?
You may have the SE Tutos running in there :

It's a new Steam feature and I think they enabled it on purpose so players can open the Steam menu and try all the new features like able to Pin YouTube in-game :
