Simply join their faction (or create your own) and you are with them until you no longer wish to be.
I'm not sure about the bounty hunting, I know it's an option, and I enabled it in my server, but I'm still not entirely sure exactly how it works.
+ About the bounty, it's more for MP where other players can see a "bounty" on you at the contract block when you play as a "Pirate/Raider" player.

I can show you a bit if what we have in Vanilla (no Mods):
> Scenarios with tasks to complete.
> Premade easy start worlds with enemy SPRT stations to conquer on all planets.
> Encounters (in space, abandoned stations/ship protected by enemy Drones)
> Enemy Drones.
> Cargoships.
> Wolves on Earth like planet.
> Spiders on Alien planets and Pertam planet.
> Weather that adds : easy, medium and hard areas to survive.
> Economy that adds missions like to do at the contracts block of dead NPC stations on planets and Moons/space, sell and buy items at the Store block, also buy ships with Space credits...
+ and more ... like adding Workshop Mods to create world to your liking.
May also create scenarios or use player made scenarios shared on the Workshop..
+ We can create Vanilla enemy Drone spawner to add in your scenarios or simply to test your warships, that is very easy to do, all info about how to play with the in-game Drones added here :

All good to play coop with the world settings you like the most.
I recommend to go creative mode in asteroids only world and take time to learn how to make a space ship first.
Example on "Nuclear Ion space ship"
You need :
1 - Cockpit.
2 - Gyroscope.
3 - Nuclear Reactor.
4 - ION Thrusters on all sides.
5 - Enter the cockpit, try the ship and add more of #2, #3 and #4 if needed to have a better maneuverability = it goes with the total mass of the ship so you will need more on bigger ships.
6 - Full all its containers + connectors + O2/H2 Gens to know if it can fly Full Load, so you may have to add more thrusters and gyroscopes once Full, engineer testing needed.
If you do the above = The rest will become easier.

Online in multiplayer the game in general is open season toward what you want to do. This is a great game I'd love to have the wife play with me but she's not in to it.
In my opinion from what you asked I think you and your wife will grow to be addicted to this game. People either love this game or they hate it. Most of the people who've tried it that haven't stuck around assumed it was a combat game and were disappointed that it doesn't do combat stuff very well.
You may not get to understand the game within the 2 hour refund requirement if you decided to get it. It's a bit complicated to play and difficult to learn. Most of us who've been playing for a while learned what we know from other users who've posted helpful guides and youtube videos. Check out some youtubes if you haven't already before you try jumping in.
Since your are new and don't know me I must specify

This is where the mods come in.
WeaponCore is almost a 'must have' if you want a large variety of weapon choices.
Though primarily weapons for vehicles and stations/installations, it does offer some hand weapons as well, if I'm not mistaken.
Of course, there are also 'hand weapon' mods out there too, many that are fully compatible with WeaponCore.
This is good advice.
If you are 'on the fence' about getting this game, do a little homework first.
It does have several DLCs. They are NOT required to play the game, and give no advantage over players that don't have them, but I found them to be nice addons and so I purchased them all.
Again, they are NOT required to play, and beat an opponent. You can whoop a$$ just fine without them.
You can cooperate with other players, go solo, bounty hunt, join a large faction, raid, get raided, trade, sell ships, race, make bets, play economy, become a mega corporation, or warlord, etc.
Anything.

So if I got you right, there is bounty hunting implemented but its restricted to Multiplayer only? No PvE bounty hunting? We are not that much interested in MP aspects like PvP since all the other games we tried PvP in were either unbalanced or full of hackers.
The building stuff makes us curious too, yes, But since you mentioned factions, are there vE faction wars? Can you join a faction, doing missions, unlocking stuff to build and weapons and armos and such?
Also we don't mind about that refund rules here on steam. In all the years we been playing games I can't even remember when we last refunded something. Maybe 1 or 2 games that didn't work at all. But thats about it.
@Jack Schitt Ahhh yes I know what you mean! Maybe I can help with that a little. Because my wife was exactly the same at the beginning. Not into real gaming at all. But into smartphone stuff instead. Was addicted to that thing even. From that point it was easy to convince her to play something together. She already played those typical mobile games that all ladies tend to play. If you know what I mean. And thats the best starting point for a transition. Because mobile games always have similiarites to real gaming making the transition over to the good stuff only one step away. Something easy for the start and just have a good time. Today her smartphone addiction belongs to the past. Me and her new hobby took that place haha. First she got her own console and about a year later her own high end gaming PC standing right next to mine. Many beautiful years with the same hobby, rig and even the same taste of games were the fruits of love and effort.
Never forget: All gamer girls were first timers at some point. Make sure to have an ace up your sleeve (like mentioning how cool it would be to become a team outside the usual daily routine, asking about her opinion on how to solve a quest or puzzle, or story question, etc.) and you will have better chances for her to share the same hobby with you. If not, don't worry. There are always a thousand other options you can have fun with your love. :)

Oh and I forgot to ask: Will progress be saved in a coop session outside of MP servers? Like built ships etc.?
No Faction "wars" but : enemy stations, enemy ships and enemy drone spawners will be in if you use the right custom world and enable all in from the advanced world settings.
-> We can set to our liking so disable all enemies to take time learning and enable later for example.

PVE war is doable but you will have to create that enemy Faction, so by adding enemy ships or Drone spawners at a specific area, create the world/scenario in creative mode before setting survival to play in.
We have very good and kind Modders in SE, some have shared enemy Mods ready to use but I recommend to become Pro against Vanilla enemies before adding more Faction wars in.
The "Main goals" are to find Uranium to build the best ship concepts of the game so the "Nuclear ships" that uses Reactors with Uranium as power, those give to best concepts, also find all the Rich ore spots and Easy Biomes of the game :
Rich ore spots = Where all ores can be found close to each other.
Easy Biomes = Where the Ore Detector is not needed and no "Bad weather" so no lightning.

Play all available different Biomes to have different gameplay to be able to survive at Easy, Medium and Hard Biomes.
Yes we can set any local save on "Friends mode" and lock the number of players that can be changed in-game F3 key later and the host save the world before exiting.
I also use the Workshop as "Backup system", I republish the save after all gameplay sessions, this way I can reload or my son can reload it if I am not available but doing so changes the host so I use more as Backup save set hidden for personal use.

Save by creating Blueprints of all your creations if you go public servers.
