Report a translation problem
Some parts have computers in them that is shown with a blue line on the bar when grinding. Grind them down to the blue line and the computers will be removed. Then you just weld them back in and it will convert it to your control.
The red line is just the line of 'damaged but still works normally'.
The recent patch fixed the cargo ships being invincible bug. If you are lagging thats the fault of the server sadly, try playing on one with a better ping and you should be able to get close and grind your way in.
Of course, laggy servers (low ping) do not help with entering these ships, due to desync issues. I can't help much with that part.

Current hacking is not hacking imho
I second this, as when I told my friend to "hack" the ship, he thought I meant hack the game/cheat untill I explained the process .__.;;
Sucks that there's no way to stop turrets from attacking blocks yet. I don't even know what "target moving objects" is supposed to do, but turning it off doesn't seem to do much.
