This might at least get them back into a resonsable range so you can adjust the projector parameters and get them back to where you want them.
We can change/modify the Bp orientation :
1 - Paste the WS item.
2 - Aim at the first block in front (nose) and hit Ctrl+B.
= Now this new Bp should have a new position on the projector block.
3 - You may try to create Blueprints with different "First Block" positions till you have the right one for you "Printer"
Let me explain the "printer". I literally does that. A projector used to project the blueprint of a small fighter inside the hangar bay of a large carrier. This blueprint was moving with the projector via pistons, in front of a welder array, literally "printing" the fighter layer by layer, just like the old toner printers. Ingenious design, sadly broken by this projector issue.
May be because of the last game update and that would be a new bug to report if so.
More testing needed but you seem to have done some good testing already.
1 - The "Plus" + icon on the Projo must be the UPward position of the Blueprint/ship.
2 - The " I " icon must be the Forward position on the Blueprint/ship.
Also the Projector should be next to the "First" block added when creating the ship or the aimed block when creating the Bp (Ctrl+B).
If that is not it anymore = Bug report to do (may be reported already tho)
I just tested the Projector block and that is what I've noticed:
Setup the Projo forward pointing the left side of this screenshot :

Tested with a new 2018 Car Blueprint I made :
https://steamcommunity.com/sharedfiles/filedetails/?id=1587109243
= Wrong Forward side but Top OK
Tested with a new 2018 Ship Blueprint :
https://steamcommunity.com/sharedfiles/filedetails/?id=1587115213
= All good and the Projector is the first block I've added when creating the ship that is under the cockpit.
Tested with a new 2017 Ship Blueprint :
https://steamcommunity.com/sharedfiles/filedetails/?id=1587108022
= Same, position good and Projo uses the frist block added.
Tested with a new 2013 Ship Blueprint that I just upgraded this week :
https://steamcommunity.com/sharedfiles/filedetails/?id=1587106957
= Wrong Forward side but Top OK
Maybe just change the Projector block position so your Bp will have the right orientation, like for the last screenshot in my above ^ post = I will use the " I " Projector icon as the back of my ship.
Have you tried by deleting the Projector and add new?
Sometimes just a On/Off fixes Bp problems.

This is the orbital weapons platform, has a targeting reticle, and the rods are refilled via projectors and welders.

This is the carrier which "prints" smaller fighters, should be already pre-loaded with this:

And finally,

This cruiser also has a targeting camera with an aiming reticle via projector.
The first one seems broken and the author does not want to fix update
The last one says that it is an Exploration ship but got rotors on it and one of the rules is NO rotor / pistons, NO Scripts...
They all seems to need an update so maybe ask the author = he is the best one to ask for help.
I will try to paste in creative the > "The Kaikohuru Cruiser SR-2" < for a test.
EDIT
To know what is the "Exploration" Tag here are the rules :
