last map I played (Solar System, Mars), I found 3 uranium deposits, 2 silver/gold and countless nickel/silicon/magnesium until I found a single iron node.
Thankfully nodes are rich enough that it provided enough iron to get off the planet.
It may be RNG, but I belive iron is truly the rarest ore in planets. (which is ridiculous, it should be the most common)
Also, it will generally spawn in the same vein as nickel. And those patches are big. If you're on one side, and you're seeing nickel, just sort of float on over to the other side and hang for a second to let the sensor update. Chances are you'll find iron.
When i run out of Iron, i just fill my hydrogen based ship with Ice and bring back some Iron from spaaaaaaaaaace.
It's quite the thing to land after that because i'm using x10 invetory and about 6 large cargo on a small ship.
1 of every 5 times i do that, i CRASH HARD CAUSE hydrogen goes off quickly.
