Once you get your control device working with AC, and getting all your settings dialed in, it's actually one of the most simplest mods to jump in to. Turning on my wheel, VR headset and finding a server to jump on in CM all takes less than 60 seconds.
You can get away with using the base game alone but if you really want to push the game to the limit, you will want to use content manager which make setting up any race or tournament, installing mods a breeze, especially now using pure weather system, which you will need to stay well clear away from as it is yet again, another install necessary configurations to get it working and you will have problems for sure!
I fear if you are already having problems then forget it because you still need to set up your control system graphic settings, track and car combinations, online service and that is before you even start to download mods from websites and installing them and all the idiocracy's that come with that. Personally I love content manager with its amazing settings for most every different type of controller and computer but if you are not willing to invest your time to research how things are done, i doubt you will enjoy Assetto Corsa.
Best keep this gentleman as far away from modding Skyrim as possible if he thinks modding AC is a trip!
For a similar gameplay and simpler interface ,where you can jump in and play straight away maybe look at the Simbin games as well.

Gt Legends.
GTR2.
Race07.
All worth a try. I think they are pretty cool.
The graphics is a lower quality but the gameplay is top notch.
I find these games ,which also allow mods ,are much easier to start a race in.
Similar feeling too.
Maybe try and come back to AC to look at the extra options available here.
I also found Automobilsta 1 and 2 easier to jump into as well.
The 1st game is reasonably priced and pretty good.
Only really just started the 2nd game ,it was expensive ,but seems cool too.
BUT for value and fun I think the Simbin games are a better deal.
I sorta find AC a bit overwhelming as well -and CM for AC is not very intuitive ,to me anyway.
Not to say it is bad ,but it WILL take me a while to understand how to use it correctly.
And for present I will try these other games too.
Maybe look at these other games I suggest as an alternative.
