Then you should see a folder called AssettoCorsa, copy that. Also go to documents and backup the other assetto corsa folder if you want to keep your setups and replays.

To get the game to see those files, I think you need to run either the verify cache or actually the installation, the installation won't download anything because all the files are there but I think that's what you want to do.
I verified cache and it looks like it wants to download 6 gb. It also started downloading to the E: and not to C:. So it's looking to the E: for the game.
You could try looking in your steam\cofig directory and open config.vdf.
Search for assettocorsa and change the install directory path from e: to c:.
Take note of the appid number just before the assetto directory.
Go to your steam\steamapps directory
Look for appmanifest_***** - the number you found in config.vdf
Open that and check the drive letter associated with assetto in that file.
Open steam and verify the game cache.
This might not work. I couldn't find my appmanifest associated with assetto on mine.
I may do the redownload option. I just copy the documents in My Documents Assetto Corsa to save set ups and career progress?

After that resore the my documents/Asseto Corsa folder or only parts of it.
Cut and paste the AC folder where you want it.
Run cmd.exe, type in: mklink /d "link directory" "target directory"
So for example, say I want to move my files from steam on E: to a folder on C: called games. Type this in: mklink /d "E:\Steam\steamapps\common\Assetto Corsa" "C:\games\Assetto Corsa"
then hit enter, check the original folder to make sure it made the symbolic link correctly and you're done. When you open the symbolic folder on E:, it will take you directly to the folder located on C:.
Takes less than 5 minutes, no reinstalling or redownloading the files required.
OP, if you click on the steam drop down in the top left, and select settings, new window will appear.
Select from the left hand side "downloads". The first option will be steam library. And you can change the location to where steam install games and also where steam looks for games currently installed.
