Essentially, the outer thread wants to match that of the replacement knob and the hole in the centre would be used to screw the adapter to your shifter. It's the kind of thing you may struggle to find but could easily be made in 5 minutes by a workshop that has a lathe and some steel rod of an appropriate size.
Here's an idea....
Go and buy a bolt with the right thread on it. Chop it down with a hack saw to a reasonable size so it will thread into the new knob nicely....but don't thread it in yet ;)
Now the tricky part.
Drill a hole down the centre big enough for the thread of the original knobs screw to fit through.
At this point, there are number of possible options. If your "adaptor" is too long for your original mounting screw...
A) Buy a longer screw with the same thread. (needs space inside the new knob)
B) Drill a larger hole down part way through the "adapter" that will allow the screw head to fit. (might not be possible depending on how big the screw head is in relation to the "adapter")
C) Shorten your "adapter" length to allow the original screw to pass through with enough thread to lock in to the G27 shaft. (could cause an issue with having enough thread to secure the new knob firmly)
You might want some locking washers or some thread lock to keep things from becoming loose too easily.

I havent seen any adapter pre made for the g27. i have one and actually bought a fanatec CSS to replace it. That has a thread to fit a standard shift knob but you will have to get creative to fit yours.

My G27 shifter shaft looks to be about 10mm in outer diameter, so I don't really see a different way without completely butchering nice shiney things. If my eyes are right, you could thread the existing shaft but I'm guessing you don't have an M10 die.

Before you go down that road....
Once you have removed your original knob, will the new one just slide over the shaft?
