Notice that when you move your stick to the side in GT, the wheel takes quite a bit of time to actually steer.
AC isn't like this, it has direct input, you move it 30* and the wheel will move 30* (not exactly on a controller, because the input range on a controller isn't 900*, but you get the idea).
AC will never be like this, and it's not possible to get it entirely like this.
The only solution is to just practice being much smoother with the stick. You'll be fine as long as you're patient.
Anyways, you won't be able to get anything close to the the 'feel' (when you're really not feeling anything, see what i did there? :P) because AC and GT have completely different physics. So you won't be able to get it anywhere near it. You will need to test test test. AC wasn't designed around a keyboard/gamepad (though it's in there) so you need to completely forget what GT is like and keep practicing and testing.
Get yourself a wheel even a cheapy then upgrade later, and then you'll never think twice of ever using a gamepad for a sim.
neopheX - I'm a very casual player. The sim is great, but I'm not going to get into it that seriously. Just be glad people like me support the developers too.
That's all well and good, but you'd want to hope you are with other gamepad/keyboard users because sim freaks will unleash hell on such 'casual' players lol..
This is why AC needs to somehow keep the gamepad/keyboard users together and the wheel users together,.
Suss out YouTube a fair few gamepad users did a video of their settings for the controller. See how you go.
It's still direct, it just filters it a bit to make it easier, best thing would be speed sensitivity.
At the end of the day, you're not getting it anything like GT, it's always going to be harder, more realistic, but a lot more rewarding. I suggest you just practice, don't even bother with the career mode. Just practice with some cars you enjoy, get used to it, be smooth, and you'll have a lot of fun.

People already got a CarX-styled steering filter that lets you drift with ease on a controller but I have yet to see someone give a GT-like filter a go with this.
i do alot of sim racing and sim flying ,
AC controller settings are somewhere in the main discussion groups and aren't too bad TBH,
but you will end up getting frustrated as you need to be super smooth ,
i think the pad settings are by Kumbo ,somewhere here on steam in AC pad discussions,

speed sensitivity ; 70% , or try 75%
steering speed ; 45% , or try 20%

if in cockpit view ; lock the virtual steering wheel to 180 degrees ,
i prefer 200 degrees ,
i prefer using my T300 thrustmaster GTE wheel as it feels great , but occasionally when i feel lazy i use the pad controller,
i would recommend a FFB wheel ,even a T150 thrustmaster budget wheel ,
it will greatly enhance Assetto Corsa,
