The virtual steering limit is there in case the car your driving in-game has more virtual steering wheel rotation than your physical wheel you're holding in your hands. It is to match the animation to your physical wheel rotation.
There is a workaround for wheels with <900 degrees of rotation. Try editing the controls.ini in your documents folder at C:\Users\********\Documents\Assetto Corsa\cfg. DONT edit the one in your steam folder.

The LOCK value is your physical wheel rotation and the SCALE acts as multiplier.
This way you end up with 180/0.25 = 720° virtual wheel rotation. Should be enough for most cars and even tighter turns. Play around with the Scale value to fit your needs. Downside is that the wheel is not in sync with the virtual one anymore and you need to turn the wheel more careful as inputs are exaggerated. That said the best option is still to save for a proper wheel.
Actually, the downside of that is you lose 75% of the available lock in the car, which is not so bad with road cars, but is quite bad with cars with a low lock, like the Tatuus and Exos. The virtual wheel is nothing to worry about, you can set that to your actual wheel rotation in the options, if you want.
Personally, I never wanted to go messing around the ini every time I changed cars, so I just stuck with the default, when I was using a Momo (240 degrees).
That's how I had my Momo set up. The 'problem' (most) people have with it, is the super-sensitivity in cars with a large (700+) lock. Which is what the scale-'fix' helps with, but as I said, it then ♥♥♥♥♥ up the low-lock cars.
It's not so much about the ffb. The McLaren Gt3 has a 480 lock, so that's not as bad. Like I said, it's mainly the cars with a large lock. Try one that has 900. And if you want to 'see' how sensitive it is, keep the virtual wheel lock off.
