1) Right clicking on Assetto Corsa in your library and selecting properties.
2) Click the beta tab from the window that opens.
3) Select a build from the drop down box on that screen.
Unfortunately, Assetto Corsa does not have any alternative builds listed.
I have none but then, I just drive against myself in an effort to improve.
I always keep a backup of the game, both for when modding goes wrong and if the patch breaks the game so i actually have the version before 1.1 aswell as the leaked beta. If you have a backup like this you can put your steam in offline mode and play the old version.
My only issue really is that Oculus Rift is no longer working. I know people will so 'so what' but after you play Assetto Corsa using the Rift it's prety hard to go back to playing 'normal'.
Assetto Corsa is evry much a showcase for the Rift - now it isn't.
Is it not working at all for you? I know others have it working, they just seem to be getting over exposed PP effects which they are getting round in a couple of ways. The one that springs to mind is using page up and down to change the exposure, I believe.
Edit: I see you have a thread up discussing your exact issue so hopefully fellow rift users will get you sorted.
