What's a game that stalls your car when you don't shift properly?
So I'm basically learning to drive manual, and I want to buy a manual car in the future, so I was wondering if I could get some simulator practice before trying it out in real life. So far I have the basics, however cars don't stall on assetto corsa when I release the clutch too fast. I was looking at city car driving, but many don't recommend it.

Learn how to revmatch as well while your at it. For shifting up it's not so hard. Clutch in and lift your foot up on the gas pedal so the rpm's drop, at the same time shift into the next gear and let the clutch come up. You should feel no resistance in the clutch pedal if done right (clutch plate slipping a bit).

But for downshifting it takes some practice. The idea is basically, clutch in and bring the rpm's up by pressing on the gas pedal, to the point where it would be in that lower gear, so the flywheel and the input shaft of the gearbox are spinning at the same speed, then at the same time shift into the lower gear, and let the clutch come up. If done right you should feel no resistance at all in the clutch pedal. Don't bother with heel and toe, thats not neccesary for normal driving.

It may seem confusing at first, but once it's second nature you can really make the clutch last alot longer, because it doesn't slip as much. And you can shift faster as well, when overtaking for example. It's also a must when driving on lets say snow, because a bad downshift can make the wheels lock up.

Where did you hear many don't recommend City Car Driving? I think it's OK for practicing manual gear driving and city driving basics. I have CCD, AC, LFS and many other car sims. In my opinion CCD's physic is not good enough, and its force feedback feels ugly, but it's enough for practicing car driving. It does not simulate a racing, it is aiming at simulating a general car driving in a city, cars have very different settings for driving on roads than on tracks, and that's what you can't get from most racing sims. It's totally different from a racing car simulator. I recommend it.

My PS3 controller is set up as a wheel and if I use the cluch to quickly I have to put the car back into neutral.

As someone who learnt to drive manual at 16, it's really not that hard.
Find a quiet street and do a bunch of launches from a stationary position.
Once you aren't stalling every second launch, you're basically in the clear.
Changing gears once moving is dead simple; stalling doesn't really come into the equation.

Also the bite-point on the clutch pedal varies from car to car, so it's not something you can really get down to a science by using a sim.
Just make sure you're shooting 1.5K~ revs from the engine, and slowly release the clutch.

Just thought of a game that ilisutrates it pretty wel,l if you have it around, Eurotruck sim 2. Strangely numnbumbingly.. fun actually! But I wouldn't pay full price for it right now, just to learn show to avoid to stall.
