There is a way to change this or turn it off.
The catch is that this cannot be done via the CM.
To change or switch off you have to change the ini file of the respective vehicle.
For each vehicle individually.
You can find the files:
Drive letter:\Games\steamapps\common\assettocorsa\extension\config\cars\loaded there you look for the vehicle for which you want to change the light and open it with the editor.
There you are looking for the following entry:
[INCLUDE: common/xxxxxxx_lights.ini]
Interiorlightcolor-#XXXXXXX
InteriorlightPOS-0.2, 1.1, 0.4
These lines are responsible for that
The upper one, i.e. Interiorlightcolor, specifies the color.
This is specified as an HTML color code.
It is best to use Photoshop for this.
Of course you can also use other programs that show you the HTML color code
Select a color and enter the displayed HTML code in the line
To turn off the dashboardight completely, just put a semicolon in front of these lines.

Understeer means you see the tree
Oversteer means you feel the tree
the folder must exist, otherwise the game won't start and you wouldn't have a speedometer light.
It is in the main folder of assetto corsa.
In part, you might not be able to install a few mods or apps like CM or SOL because they contain files that need to be moved into the folder or a folder in that folder to work.

You have to proceed in exactly the same way as already described, if this value even exists.
I can't tell you what to look for. But I would start with light or something similar.
try and error is the way to go.
In the end it doesn't matter what light color you want as long as the color is in the HTML code.
But you won't be able to get a disco light.
Since that would require a time specification with changing colors.
