Try lowering your gain in game, i have the same wheel and have it set at 88% in game 107% in logitech profile with 0% spring and dampening and no self center spring.
If you go streight at a high speed in real life, you will also get a feeling of going fast. Force feedback has to find a way to sense that same sort of feeling, which is through your hands/arms..thus forcing you to have a tighter grip on the wheel and making you realise that it wouldn't be a very good idea to make 70° turns at +200kph :)
Profiler I set 101% for strength all others at zero, Inagame I have gain at 60, kerbs 80, road 60, slip 40 and feels very natural to me so give that a shot.
And wheel lock I have at 900 and let the game adjust keep the same for each car, some are lighter others heavy but no clipping in any car and can feel the tyres well.
Having forces too high just causes clipping so it will end up more like an on off switch if you set it too high. As the max force is a limit of the wheel and you want this to be in the highest load corner to still void clipping. Then you will feel all the subtle changes in force from nothing to full. If you have too high a gain it will just mean it may reach max force at 50% load and wont get any stronger and you wont feel any changes until you get below the clip point so you basically are turning the FFB into a centering spring which is quite pointless but common for many.
Anyone can do as they like but most people just dont get that critical point and so use too high a gain losing most feel and advantage of a good ffb wheel.

we do...he has a differnt issue. Even at low speeds the wheel shakes weird. For me turning down "minimum force" helped :D
Minimum force is for amplify low vibrations like a very small bumbs,having it at the lowest is better.
in case of play/loose in the center of the wheel increase it help to regain the loose part in the center.
