Did you try using wheel/custom setup instead of the xbox 360 dedicated one ?
It should allow you to setup any axis to any analogue input (steering and any of the three pedals).

open the settings in notepad and just switch the functions, easy
So, where is the function to put the throttle and brake on the right stick?
It is definately possible as that is exactly how I play AC.
But I have seen the light in the very few hours I have been playing with my new F710 and the Triggers for Accelerate and Brake and A = gear up and X gear down. Admittedly the triggers are tiring on the fingers but hopefully the springs will slacken just a little and I will become more accustomed to their use.
This game requires much more finesse driving. If you set the X and A to accelerate and brake, then it means either 0 or 100% accelerate or brake and that does not produce finesse.
I thought the Trigger would take much more time to get used to but I am delighted how quickly I am getting to grips with it - give it a try and stick with it.
