I'd reccomend adjusting your in-game seating position (slide it back) to help open up visibility, if you feel it's too restricted (as this doesn't distort the FOV, but can make a significant difference).
Also, look left/right button mapping is pretty essential with using accurate FOVs, but with an FOV of 50~, you should be able to align your central mirror to be always/mostly visible from the main cockpit camera position.
Haha, I'm borderline moved to tears by how poorly some people have their FOVs setup in screenshots/videos, so I try my best to keep other people away from forming similar bad habits.
You'll lose some "(hyperbolic) sense of speed", but you'll become a much more accurate driver and will be able to late-brake and hit apexes infinitely better.
