I have boxes of joysticks etc from flightsims and I know where you are coming from.
Actually its great with an Xbox controller, better than a stick imho. It took a while to get used to the controller but I am now a convert. I happily use a controller for all my driving sims and flight sims and even GP500 motorbike sim is improved with a controller.
I was surprised how good flight sims were with a controller too, particularly helicopters. It takes a bit of getting used to, but its well worth an akward couple of hours until you get used to it.
Firstly, it does work – but at least for me, it's going to need a little more tweaking in the same way that my 360 controller did. I sampled it with AC and Stock Car Extreme and the only 'problem' was that it needed some set-up and time to become accustomed to using a large analogue joystick again. That's a personal thing though and the same configuration could be fine from the beginning for someone else.
I'm another player that's lived and raced through every hardware generation, using all possible control methods along the way. These days, I use each control option as a matter of necessity as I can't always use the wheel and pedals. I now have a wheel, 360 pad, various computer and console controllers via adaptors, keyboard and the new stick with an option to use a throttle arm.
Especially with its central 'zero' point, the T.Flight's throttle is weird to use at the moment for acceleration and braking but it's only a matter of practice and I'll keep moving to another piece of hardware before I stop racing or playing games, whether they're modern sims or ones that are showing their years. Even with this T.Flight, I'll change between using both parts (throttle for accelerator/brake, joystick for steering) and the old stick-only style. Digital or analogue, switching between the many devices is rarely a problem beyond the few laps it sometimes takes to get used to the feel and layout again. It's no different to returning to a game after a long time away, really.
Mouse too, of course! I almost forgot that one!
It works though I have to tweak the X axis a bit to be more precise around the center. Soon I'll have a 10cm extension for the warthog, guess it will be better to be precise this way.
There is no reason it could not work. After all, what is a wheel, if not just a controller that moves around the X axis?
And this is fun to drive with a warthog HOTAS, it feels like I'm driving a plane, or flying a car :)

Assetto is a very good sim, but with a wheel and pedals. I started doing 7 mins on the Nordschleife with a wheel (I couldn't even complete the track with the joystick) and now I'm doing 6:20 on the tourist layout with my G27. And let me tell you, there's nothing like driving with a wheel, you'll be in a whole different world coming from a joystick even if you do well with it in other sims.
Anyway device is secondary to skill. I remember the old time of NR 2003 season. 1 guy was among the best with keyboard cuz he couldnt affort a wheel.
I agree its possible, but theres some issues. Like, if you press a button to accelerate and the throttle goes to 100%, you just gonna spin your wheels without max TC control or so. Devs would to put a lot of thought into how to implement it like that. And it probably wouldnt be worth it to most people anyway.
Youre just asking for a very niche thing, but you can do it yourself it with Vjoy or so, creating a virtual joystick for throttle/etc on button press.
Otherwise why not just get a gamepad? Thatll work in so many games and give you a lot.
