They go wayyy faster than you think, the brakes are quite good for road cars, so just brake earlier.
I found some youtube videos with people driving a lamborghini gallardo at Sanair race track, but they seem to take the car slower than what people do in video games (sim racing game).
Do you have a video of yourself or a good example from someone else?
What's your controller and do you have good settings for it? What I think is happening, is that you're hearing maybe too much tyre scream when cornering. But when in reality is fine. Go to audio options and lower the tyre sound, maybe your sensation of the car will change.
Use the actual brakes and don't rely much on engine braking. Is more effective with the brakes, or just some small throttle lift off, but use the brakes for braking, not the engine.
I have no problem going around the corners.
Yeah i think in video game we push the limit to extreme, in real life when i drive the lamborghini i have to be extremly careful, i just retry to drive it more slowly and it work like in real life.
But i think the tire is the problem a bit too 'icy' but the feeling is almost the same.

So check around game and setup settings until you can find a more equal experience. Your controller settings also influence, a ffb wheel is more recommended.
Cars aren't supposed to brake when you downshift or coast by releasing the throttle. They of course lose speed when you downshift or let go the throttle, but is not efficient; so you need to use the brake pedal more.
5 -> 200 km/h -> brake -> 100 km/h -> downshift 4 -> no engine brake, no sound -> downshit -> 3 -> no engine brake, no sound -> lost control of the car
