The only issue I see with dirt tracks would be the simulation of that dirt and how it affect traction. AC doesn't have the engine capable of simulating dirt under the tyre and each lap would feel the same no matter which line you took. I think that's why there hasn't been any dirt tracks reelased because they could make it look like dirt but you wouldn't be able to simulate any of it.
I've seen some snow tracks which sort feel like driving on snow/ice but once again it doesn't simulate anything past just feeling slippery.
i could try a simple blender project use grass or gravel as road
