Run AC from the latest version of Content Manager and install the latest Pure custom shader patch.
Depending on your VR headset, the native software of the headset will also let you to play around with the "render resolution" which again I've found to have a big impact on VR performance. I recommend leaving it at default but you can try incrementally reducing it to see if it boosts his frames without losing too much visual quality.

Whatever fps you get while gaming on a flat screen cut in half when using VR is pretty much a good reference for all racing games.
With this setup on Shutoko I am getting 45 FPS. I am running PureCandy PP filter on medium, I run my Vive pro at 88 SS and I maintain 45 fps even with rain. BTW, I set Steamvr to a fixed 45 fps and set content manager to do the same. YO should not need to drop below 100 Super Sampling for your GPU
Now here is where I saved FPS and increased the quality of the game graphics which works for me but your mileage might vary.
In content manager got to Settings / Assetto Corsa / Video: here set the resolution to say 3840 x 2160 or 4096 x 2160 (although for my GTX1080, I use 256 x 1600 @ 30 hz- but thats optimised for my system) Your GPU is much stronger so you should be able to use the higher resolutions.
On the same page, limit your fps to say 90 or 45 if your FPS is still bad ( also access steamvr settings and under the video tab, set the fps the same fixed rate
MSAA : 4 x
AF : 16x or less
WOrld detail :medium
Shadow resolution : Off or low - change later if FPS allows
Smoke Gen : Low
Reflections : off or 256x256 - change later if FPS allows
Select the PP filter of your choice, I use purecandy : quality : medium, glare off / DOF off / No motion blur / tick FXAA
Mirror res : 128 x 512
Pixels per display @ 1

Now go over to Settings / CSP / Graphic adjustment and turn on extension.
Render scale : 50
Under Activate AMD fidelity resolution
Quality,new: try ultra quality 77% first. If low FPS, change to quality 67%
Below under Post Processing anti-aliasing :
Mode : FXAA 3.11 / Quality: High / Ultra
Under lighting effects,: start with no dynamic lights to start, adjust later during testing and untick enable lighting reflections for now
Things like grass, shadows, particles, reflections, per pixel display and heavy lighting effects such as dynamic lights and shadows are FPS killers especially in VR. use these sparingly
These are the main settings that I use, all others you can play around with.
Play with the PP filter on / off and quality and see how it effects FPS.

I also recommend when on track, go to your right hand side menu and open :
1. View and video settings - Changes settings like shadows, world detail and many other heavy hitting options to test live on track and compare your FPS. This is a good time to test your rain on a full grid say 16 cars.
2. Same menu, open Render stats. Use the window stretcher bottom right to view more details. This app will show you wish graphical elements are pushing your gpu too hard then you can change that setting lower or off to maintain FPS.
Your frametime generation should with a little optimisation, be below the 11 MS mark
If your FPS is now good on Shutoko, you will have much higher FPS on single player races.
