How to shift with H shifter on BMW E30

This is most likely a really stupid question, but how do I shift in this car and others like it? I understand paddle shifters, I understand clutch in - shift - clutch out, but wtf is this clutchless having to keep my foot on the accelerator to shift up or down? Ive vaguely worked out up shifts but cannot work out how to slow down AND downshift at the same time. Asking here as I don't even know what to google to learn it

I think the term you are looking for is heel toe downshifting. I have not practiced that technique yet to confirm if that will solve your problem.

Check assist settings, most likely you have auto gears or auto clutch enabled.
