Personally I think they're superb and take AC to another level, but again, it's all subjective :)
They will always sound digital because of the sound engine they use (its the nature of the beast), but compare this game to many other car game such as RF2, PCARS and even AAA titles like the Forza series the team at AC have done an amazing job! The cars at very low revs and flames / backfires still need improvement imo. I've had this game since very early in its life and the sound team improve very car release, cannot wait to get my hands on the C7 corvette :)
FYI, I only speak of orginal cars, imo 99.9% of mods released have crap sounds.
Not sure when it will the older cars will ready.
This new process has been about since DP2 (iirc) and every update since has improved and improved.
imo its worth looking into youtube vids of the cars and compare them to AC, you will be surprised at how they sound :)
