Xbox 360 controller and Xbox One controller should work just fine with the defaults from my experience but I've seen others that have had problems with them. If you are playing on settings that are closer to real then you will find that since this is a simulator harsh inputs ( example: steering 100% right or left) will almost always result in spinning out. Especially in faster cars.
The best way to get used to the handling is to do a practice session and just keep doing laps. Start slow and then gradually go faster and faster around the track. Apply throttle and brake inputs gradually and steer smoothly as to not upset the car and you should get relatively good after an hour or two of practice.
I think I figured it out. I was playing around with the settings and I changed my speed sensitivity setting, and that fixed it.
I typically catch on to sims pretty quick, but this seemed especially hard
