from the data in the game, it seems like gt2 wings have more lift(can make more downforce).
grip is a product of various things, including downforce, there is no number for it. compare the traction circle for gt2 and gt3 cars. making more g in a turn, would mean the car have more grip.
im not any pro, i could be wrong.
I'm no expert or whatsoever, but I think the GT2 class is more of a "raw" experience while the GT3 is "more on rails", if I can make myself understoond.

GT2 = more horsepower and faster, but less downforce. Relies more on mechanical grip. Less driver aids.
GT2 is considered a lower series.

The GT2 in AC are the older cars. Driver aids are Traction Control and Anti-lock Braking System.

Here I am talking about the GT2 and GT3 series as it is in the present moment, as represented in Assetto Corsa Competizione.
Years ago the GT series was different. GT2 used to be the better cars (as Ferrari GT2 and BMW where in Assetto Corsa). The closest modern car to the older GT2 is the GTE car.
older GT2 mas more grip, and better performance than the older GT3.
