Keyboard inputs (on/off inputs) are not accepted good by simulators.
Some of those will also feature straight up "hacks" (forces from nowhere) to make the car behave better. AC has almost none of that.
Biggest thing is that slip angle curve. For fat race tyres, turning the tyre 1 degree means BIG change in side force, and past like 5-7 degees you get force reduction and other adverse effects. Arcade games or even simcade like Wreckfest simplify that so there is no reduction of grip past ideal slip angle, and that angle is often much higher like 15-20 degrees, meaning any twitch in the controls, or whole car slide has much smoother effect.
Same with tyre load sensitivity. In sims and real life the grip depends heavily on how much load there is on the tyre. Keyboard sucks, because to get the best grip out of the tyre you need careful managment of accelerationg (brake and throttle). Too much braking and tyres are too worked up to turn, too little braking and there is not enough load to turn. Getting into the sweetspot requires precision, so arcade games simplify or even remove that effect completely.
And thats the thing before we get into known variables, like tyre temperatures, camber etc. They all have their marigins for the car to work correctly, and depend heavily on how accurate you can be with the controls.
Some rare games do simulate all that to some degree and have a layer of AI control that puts the steering accurately to correct angle when you press on the arrow key (like codemasters F1 series). Which is unfortunately not in AC, mostly because its a indie sim with limited resources.
ps: Driving keyboard is possible but you need to understand/feel car handling, and that comes with experiance. After like few dozens of hours on wheel, you will be much better with keyboard too... but not the other way around.
You can imagine you probably wouldn't make it out of your neighborhood that way.
For acceleration and brakes best i can think of is make sure you have the realism set to gamer. This will give you full traction control, abs and some assists which may mitigate the on/off problems you would have without it :)
