A fair point lol
From my experience most of the apps and mods for this game are not optimized very well. Take this F1 Hud mod. Try installing it in the usual way and then take a look at one of the log files (off /Users). It grows to 225 meg! Besides this the F1 Hud mod will cause severe video stuttering while driving, even if the mod isn't used in the game.
I've heard of the GP2 mod cauing high occupancy rates. The list is pretty long and I would suggest only installing mods that you are pretty sure aren't causing problems, and this includes track mods. If you try and install every app, track mod and car mod you're going to run into problems.
So I think it would be best to get things straight first before attempting to add something really foreign to the game. Part of the problem with these mods is that I don't think the Devs have given users that much information about how to create mods or how the game reacts to certain things that mods might do.
And to top it all off these mods are coming fast and furiously and it's hard to figure out what is what, what version is what version and all the rest.
My suspicion-- especially with the apps-- is that creators are more concerned with PR (i.e., future monetary rewards) than they are with actually creating something that is useful, that actually works, and is optimized.
Myself, I stay away from most of these things until I know they actually work and aren't a huge system drain.
Again, I believe this whole problem of bad apps, mods and the rest is a direct result of poor communication about what AC can actually do and not do. A lot of the time users have no idea what does what. Now this could either be, when it comes down to it, because the Devs just aren't communicating or because the Devs don't even know themselves.
It'll be interesting to see, once AC goes retail, if the game actually includes a manual, which is pretty standard for most if not all games.

I didn't find a direct answer, but many of those links lead to some hilarious posts.
But I am definitely sure the devs will not add bikes, that falls way outside their target focus when they designed AC. As it stands now, the game's engine doesn't look like it will be able to pull off bike physics properly without a complete overhaul, which I don't see happening.
As far as the bikes go, it's been discussed on the modding forum. It is unlikely to ever happen due to the different steering system, no proper weight transfer and leaning system, and the annoying workarounds you have to do due to the 4 tire limit. The Reliant Robin was able to solve the 4 tire issue by just suspending one in mid air, but it's obviously not perfect.
