Seems a pretty common problem with Assetto Corsa and G25/G27 pedal assemblies, so I'm putting this up as what I did to solve the problem and hopefully someone else with the same issue will be saved some headaches

For the clutch, Go to content manager and you need to mess with the invert axis for all 3 pedals and the pressure sensor for the clutch. In the content manager, got to SETTINGS, CONTROLS, select WHEEL from the drop menu and then click each box and calibrate the pedal. You can watch the input, so move the slider around until you see the clutch engaging.
The throttle and clutch goes "forward" and the brake goes "back". You can see what I mean if you watch the inputs.
The clutch pressure slider needs to be moved around until you see the clutch engage.

Initially, I tried to use the clutch via content manager and it did not show me the transmission flashing red when I pushed the clutch and paddle shifter (this is on h-shift manual cars. Not semiauto paddle shift. BMW E30 Rally). So I knew my clutch pedal was not broken internally and I also dissambled the assembly and cleaned it (youtube vids on this)
With the seperate H-shifter installed, it messes with the game settings and would not register the clutch pedal (not even in the configuration wizard in the main game.Many posts on this issues). You can skip the clutch by pressing throttle and map the shifter, but in game, you will just rev your engine and break your transmission if you try to shift.

MAKE SURE TO SAVE THE PROFILE WHEN YOU GET IT WORKING
Go to Assetto Corsa main game, settings, controls, wheel, LOAD the preset you saved and it will work in the main game as well if you're doing career or whatever.

For a Logitech Driving Force shifter to USB , you need a special made connection.
You need a specific db9 to usb that reads the shift. A normal one from the computer store doesn't work. I initially bought a db9 to usb from a local computer shop, cause I read it quickly in a forum and quickly found out it doesn't work and then researched further.
Amazon has them for 37 CAD and it's plug and play.

I also recalibrated the driver and software "back to factory" or whatever for the steering/pedals

Hopefully this is simple enough to follow and this will show up in a web search for anyone facing the same issues and works for you as well.
