I find that all settings set to between 40%-50% are pretty good for Assetto, to replicate the feel of power steering but still maintain road feel and what the front wheels are doing.
Its not too difficult to setup wheels in AC, there is a basic set of things you should do.
In the Logitech profile software zero/turn off both damper and centre spring- put it to zero because AC handles these on a per car basis. Also make sure to point the profile software to acs.exe as that is the main game, don't point it to assettocorsa.exe as that's the launcher and your settings won't apply to the game.
In AC settings, put FFB gain to 85%, minimum force to 5-8%. Kerb, slip and road - set to your preferences.
Try that and see how it goes.
