Ironically having been as a spectator to NASCAR (Daytona), IMSA (VIR and Mid-Ohio), and F1 (Circuit Gilles Villeneuve) I have to say that F1 is by far the worst spectator experience. Part of that has to do with the track I went to, but not completely. F1 cars are the fastest, but the most impressive thing is actually how fast they stop. TV doesn't really do it justice. Other than that IMSA is BY FAR the better ticket, especially with cost taken as a factor. Even NASCAR puts on a better show than F1.
With IMSA, even with a basic GA ticket, the pits are open to fans as are drivers and crew. Before the race you are even allowed to walk the grid. The same in F1 is a 2.5K ticket! Furthermore, F1 cars sound like garbage now. Half the experience of a race in person is the sound. The French loved the Vettes at Le Mans. I know lots of people say they like high rpm shriek but V8 thunder you feel in your guts. Feels like a bomb goes off every time those cars got on the gas (sadly the thunder is gone with the C8R).
At IMSA it cost a couple hundred for the whole family (kids were free), we had a picnic and walked to different spots on the track to see different views. The cars have lighted position numbers to know who's in what place. Each marque usually has its own car corral for fans to park. So being at the race is practically a car show (Vette, Porsche, Lambo, McLaren, etc)
With F1 the cost of ONE GA ticket is the same as the entire family at IMSA. Cheap grandstand seats (kids not free) for the family is easily over 1K. To watch a race that has less passing, few if any lead changes, and no ability to know what is going on without a leader board or on track screen (which are near impossible to see with a GA ticket). Oh yeah, F1 charges your first born for merch.
And I prefer driving street cars to race cars in game. What's your point?
My point is quite simple. You can race anything. Literally from lawn mowers to semi trucks. A "race car" can be quite simply defined as a car that competes against other cars within a given set of rules. There is no "best" race car, per se. An F1 car would be annihilated if raced against NASCAR rules, or IMSA rules, or NHRA rules and vice versa. And with respect to pure competition, F1 is a horrible racing series. While the driver plays an important part, it is primarily an engineering exercise. Which is why, by the rules, each team MUST build their own unique car. I know of no other racing series that requires similar. Most other racing series have some form of BOP to aid less capable teams and cars. Frankly, for pure driving competition you have to look at something like Spec Miata (gasp a street car). All the cars, by the rules, are required to be equal (some teams are able to push the limits with that).
To tie this back into AC, if you want race open wheel exclusively I'd recommend a certain other racing series that comes out yearly with nothing but F1. No need to take everyone else's toys out of the sandbox, when there is already your favorite somewhere else.

GT cars are actually lots of fun, so are regular cars, F1 cars and lots of other cars too!
Besides, the more variety of cars you learn to master, the greater driver you become, which is 1 of the funnest part of refining yourself as a driver.
But as some already have mentioned too, if you don't like GT cars, ignore them and stick to what you do like, it's as easy as that really! :)
Driving an F1 is WAAAAAY easier than a GT3, due to lower CoM, less weight, harder suspension, much better aerodynamics. But GT3 is in no way trash, just a completelly different animal.
