Increase braking input
I've got a Thrustmaster T150 and I've found with several games now that the braking input is far to little to what I should have resulting in me frequently missing the apex because the car doesn't slow down enough.

When I press the brake it only goes up to 20-30% and I really need more than that if I want to make corners. I really have to slam on them in order to get the bar to 80% braking.

So is there any way I can make the input from my brakes a bit more sensitive so that I actually have the braking power I need to keep my speed up?

Have you done the in game wheel setup procedure? that's the most likely solution.

Make sure the car you are driving dosen't have a brake value in the pit lane car setup options Brake pressure 100%.

Yeah I've done the in-game set up procedure after remapping some buttons went wrong.
I'll look for the brake pressure in the pitlane.

on the options, controls page there is a small slider bar under each input, 0 - 100%, you can see the correct slider moving as you step on the brake. try sliding that one down to 90% ish and see how it feels.

there is also a brake pedal gamma jobby in the advanced tab, unfortunatly its far too early for me to even think about explaining what that does but im sure you can work it out with the help of google and just messing about with it.

In the controls menu there are red bars bottom left, when you press the brake does the white bar go all the way to one side?

Does that wheel come with those pedals that have the conical brake mod as standard?
You need to calibrate it in settings either through driver setting or in game so that you can get maximum axis movement.
