Report a translation problem
In AC you have to set up the rotation limits (lock) on your wheel[game controller] to the class of vehicle you are driving. Notice in the games controller setup options you have a slider for rotation- There are multiple ways to set this up correctly and it depends somewhat on the Racing Wheel you are using. The simple way to get your virtual cars wheel rotation to match your controller [the goal] is to instruct the assetto_corsa.ini to set a virtual lock, which will change automatically to match the vehicle you are driving.
In three simple steps:
1: set your game controller ie-Logitech/ Thrustmaster/Fanatec to it's maximum rotation in the game controllers dialogue.
2: navigate to C:\Program Files (x86)\Steam\SteamApps\common\assettocorsa\system\cfg and open the folder assetto_corsa.ini and (near the bottom) edit
[SOFT_LOCK]
ENABLED=0 to
[SOFT_LOCK]
ENABLED=1
3: Start up AC, run the controller setup, and then make sure the rotation slider is all the way up, and matches what you had set your Controllers rotation to. (max)
Now you should have perfect 1:1 rotational sync between your virtual wheel and your controller no matter if you are driving a car with a factory lock of 360deg, or 900deg or any in between.
There is a slightly more complicated way of setting this up, (manual) that relies on your controller to set steering lock, and delivers, imo, better ffb and stops, but it's not necessary or feasible unless you have a wheel that allows on the fly wheel adjustments.

...you have FFB and larger rotation, in which case some of the information already posted will help.
There are lots of posts from people with the non FFB version of the wheel across various titles where they are not happy chappies, so, I would be inclined to say the problem is in the wheel itself or, you have a deadzone set somewhere. Though, if you set a deadzone in game, it should react smoothly still.
I can't remember what options AC has for joypads but if there is a sensitivity option, I would try reducing it. This will make those movements around center "less wild".
