To my mind racing sims are all about getting to drive cars no one will ever let me drive, Lotus type 49, Sauber-Mercedes C9, that kind of thing. I already own an old VW which I can drive any time I like AND its doesnt have an engine out of farm machinery, which is basically what you are asking for.
I can honestly say if Kunos announced they were adding a mk4 golf to this game I would be the proud owner of a years iracing subscription less than 10 minutes later.
But I do see where you are coming from, I prefer road cars to race cars, just please for the love of god not a mk4 golf, v6 engine or not.
Sounds to me like you are a bit of a petrol head, if im right about that you are gonna need a proper wheel and pedals, and probably a VR. The oculus DK2 is cheap second hand these days and you dont need a monster pc to run it.
AFAIR VW used to support at least one race-series with the Jetta-TDI (iRental offers it amongst it's road-racers).
Yet with the more recent news and politics around Volkswagen and their "Dieselgate" I do not exactly expect them to be seeking for further (global) marketing-opportunities regarding their diesel-engines. Apparently they full-on cheated the system because of a business-decision in the development-phase of the affected vintage of 2.0l engines (...)
Also, they just struck a major deal with A.C. (Porsche is an official part of Volkswagen group nowadays). Bring on the Cayenne & Panamera V6-Diesel, then ... or not. That is their decision to make.
Apart from that, you say you owned a classic Rx7. I honestly don't know why you don't own AC plus Jappack, already? Afraid of being reminded of an awesome car?
And yes I'm afraid of falling in love with my FD RX7 all over again such a car.
Adding a large number of "grocery cars" is not something I want to see.
A few might add some interesting variety but it is better to simulate cars you can't get to drive in the real world.
There's still large number of legendary cars that could be added so I hope those have priority.
